Burger Marinara Casserole
Great for Phases 1 – 4
Easy to prepare
- 8 oz. lean ground beef
- 1 packet Ideal Protein White Cheddar Ridges (optional)
- 4 eggs + 2 egg white
- 1 ¾ c. shredded zucchini
- 1 c. Marinara Sauce (see Marinara recipe)
- ½ c. chopped bell peppers
- ½ c. sliced mushrooms
- ¼ c. sliced green onions
- onion powder
- garlic powder
- salt & pepper
Step 1. Preheat oven to 400 degrees.
Step 2. Place shredded zucchini in a strainer, sprinkle about ½ tsp. of salt and mix in. Let sit.
Step 3. Brown ground beef, seasoning with onion powder, garlic powder, salt and pepper, to taste.
Step 4. Halfway through browning, add peppers, mushrooms and green onions, finish browning beef.
Step 5. Drain fat, set aside.
Step 6. Beat eggs and egg whites.
Step 7. Dry zucchini, then add to egg mixture and mix well.
Step 8. Pour into a sprayed 9×9 baking dish.
Step 9. Layer ground beef mixture, Marinara sauce, top with the egg mixture. Season with salt and pepper.
Step 10.Bake approximately 25 minutes or until knife comes out clean when inserted.
Serving Suggestions: Sprinkle crushed Ideal Protein White Cheddar Ridges to add a cheesy flavor.
