Great for Phases 1 – 4
Easy to prepare
- 2 bags frozen cauliflower
- 16 oz. chicken stock (no sugar, no msg)
- 3 stalks celery
- 1/4 c. scallions
- 2 tbsp. olive oil
- 1 clove garlic
Step 1. Chop celery and scallions.
Step 2. Saute celery and scallions, garlic in olive oil until brown.
Step 3. Add frozen cauliflower and top with chicken stock.
Step 4. Bring to boil, reduce heat and simmer for 30 minutes.
Step 5. Scoop out veggies only, and place in blender/ mixer. Blend until soup texture, add liquid
from pan for a thinner soup, leave out for a thicker soup.
