Cauliflower – Cauliflower Stuffing

Cauliflower StuffingGreat for Phases 1 – 4
Easy to prepare

Ingredients:

  • 4 tbsp. olive oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 head cauliflower, riced
  • 1 c. mushrooms, chop
  • sea salt
  • pepper
  • 1/4 c. parsley, chopped
  • 2 tbsp. rosemary, chopped
  • 1/2 c. vegetable or chicken broth (sugar free)

Directions:

Step 1. Heat oil in skillet, add celery and soften.
Step 2. Add cauliflower, mushrooms and season with salt and pepper. Cook until tender, 5 to 10 minutes.
Step 3. Add the rest of spices and onions.
Step 4. Add the broth and cover until totally tender and liquid is absorbed, approx.15 minutes.
