Easy to prepare
- 4 tbsp. olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 head cauliflower, riced
- 1 c. mushrooms, chop
- sea salt
- 1/4 c. parsley, chopped
- 2 tbsp. rosemary, chopped
- 1/2 c. vegetable or chicken broth (sugar free)
Step 1. Heat oil in skillet, add celery and soften.
Step 2. Add cauliflower, mushrooms and season with salt and pepper. Cook until tender, 5 to 10 minutes.
Step 3. Add the rest of spices and onions.
Step 4. Add the broth and cover until totally tender and liquid is absorbed, approx.15 minutes.
