Cauliflower – Cauliflower Tortilla

Cauliflower Tortilla

Good for phases 1 – 4
Easy to prepare

Ingredients

  • ¾ a head of cauliflower riced or 2 cups riced and packed cauliflower
  • 2 eggs
  • salt and pepper to taste
  • olive oil in spray (Misto)

Directions:
Step 1. Preheat oven to 375 degrees.
Step 2. Line a baking tray with parchment paper.
Step 3. Pulse cauliflower until very fine.
Step 4. Place riced cauliflower in bowl and microwave for 2 minutes, stir, then two minutes and stir.
Step 5. Using a towel (and gloves as it’s very hot), wring out all excess water.
Step 6. Place drained cauliflower back in bowl and add two eggs, salt and pepper. mix well.
Step 7. Scoop out cauliflower onto parchment paper, creating 6 circles.
Step 8. Bake 10 minutes, flip and bake another 7-10 minutes.
Step 9. Peel from parchment paper and let cool.
Step 10.Spray pan with olive oil and heat, place each round into the pan pressing down slightly and brown.
