Chicken – Baked Fajitas

Baked Chicken Fajitas

Great for Phases 1 – 4
Simple to prepare

Ingredients:

  • 8 0z. boneless chicken breasts or tenderloins, cut in strips
  • 1 red/green peppers
  • 2 tomatoes, diced well
  • 1 (4oz.) can green chilies
  • 1 tsp. minced garlic
  • 3/4 tsp. cumin
  • 3/4 tsp. chili powder
  • 1/2 tsp. oregano leaves
  • salt/pepper, to taste
  • 1/2 tsp. lime juice
  • 2 tsp. grapeseed oil

 Directions:

Step 1. Cut chicken and veggies.
Step 2. Mix tomatoes, chilies, lime juice, oil and all spices.
Step 3. Stir into the chicken/veggies and pour into a baking dish.
Step 4. Bake at 375 for 35 min, or until chicken is done.
