Cran-Apricot Muffins / Loaf
Great for Phases 1 – 4
Easy to prepare
- 1 packet Ideal Protein vanilla drink mix (dry)
- 1 packet Ideal Protein crispy cereal mix, crushed (dry)
- 1 tsp. baking powder
- 1 tsp. Splenda
- 1/3 c. liquid egg whites
- 2 tsp. olive oil
- 2 tbsp. Walden Farms apricot fruit spread
- 2 tbsp. Walden Farms cranberry fruit spread
Step 1. In a medium bowl, mix dry ingredients well.
Step 2. Mix apricot fruit spread and cranberry spread in a small bowl and microwave 15 seconds.
Step 3. Add melted fruit spread to dry mix.
Step 4. Mix in egg whites and olive oil to above.
Step 5. Spray muffin tin (regular or mini) or mini loaf tin, spoon in batter
Step 6. Bake on 350° for approx. 10 minutes (less for mini muffins).
