Cauliflower, Cabbage and leek Soup
Great for Phases 1 – 4
Easy to prepare
- 1 head cabbage
- 1 head cauliflower
- 2 leeks
- 2 packets Ideal Protein Leek Soup
- olive oil
- sea salt
Step 1. Chop all vegetables into small pieces.
Step 2. Saute cabbage in olive oil, add leeks and saute approx. 5 minutes longer.
Step 3. Add cauliflower and broth, salt and pepper and let simmer approx 30 min.
Step 4. Once cauliflower is soft, mash completely. Add more broth for a thinner soup.
Servings: Makes 2 Ideal Protein Non restricted meals when using IP Leek Soup.
Add chicken, and a side salad for a complete dinner.
