Pie – Apple Pie

Faux-Apple Pie

Good for Phases 1-4
Easy to prepare

Ingredients:

  • 4 cups jicama
  • 1 tsp. Cinnamon
  • 2 Lemons
  • 2  packets Stevia or Splenda
  • 3 tbsp. of Walden Farms Apple Butter
  •  1  packet  Ideal Protein Apple and Cinnamon Soy Puffs

Directions:

Step 1.  Peel Jicama.
Step 2.  Slice Jicama into 1/4 inch pieces.
Step 3.  Place the Jicama slices in a large bowl.
Step 4.  In another bowl combine fresh squeezed lemon, cinnamon, and Splenda.
Step 5.  Soften the Walden Farms Apple Butter in the microwave for a short amount of time and add to these ingredients.
Step 6.  Add the liquid ingredients to the Jicama and mix very well.
Step 7.  Place mixture in a pie pan.
Step 8.  Crush a packet of Ideal Protein Apple and Cinnamon Soy Puffs. Spread this out as top layer of the “pie”.
Step 9.  Bake, uncovered for 30 to 45 minutes at 350. Check to be sure the pie does not burn.
