Potato Puree – Latkes

Cauliflower Latkes

Good for Phases 1 – 4
Easy and fun to make

Ingredients:

  • 1 head cauliflower
  • 2 tbsp. Ideal Protein Potato Puree
  • 2 tbsp. olive oil
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • pepper, to taste
  • 3 egg whites
  • 4 tbsp. olive oil in spritzer container

Directions:
Step 1. Preheat oven to 350 degrees.
Step 2. Cutcauliflower into small chunks.
Step 3. Drizzle with 2 tablespoons olive oil and mix well.
Step 4. Roast cauliflower on 350° for 20 minutes.
Step 5. Remove from oven and cool for 10 minutes.
Step 6. Mix the rest of the ingredients with the cooled cauliflower.
Step 7. Form small balls with the cauliflower batter, place on baking tray (spray foil or tray with non stick spray) and flatten, using MISTO, spray with olive oil.
Step 8. Bake on 425 ° for 10 minutes, turn and spray other side, and bake for 10 more minutes.
