Rotini – Vegetable Lasagna Slow Cook Soup

Vegetable Lasagna Soup

Great for Phases 1 – 4
Easy to prepare

Ingredients:

  • 1 packet Ideal Protein Rotini
  • 1 c. vegetable broth
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/4 tsp. sea salt
  • 1 clove garlic chopped fine
  • 1 c. chopped veggies of choice (zucchini, yellow squash, peppers, celery, mushrooms)

Directions:

Step 1. In slow cooker, add all ingredients for approx 5 hours (until all vegetables are tender).
Step 2. In separate pot, bring water to boil, and boil rotini for 7-8 minutes, drain.
Step 3. Add rotini to slow cooker and cook 15 more minutes.
