Shrimp and Noodles with Kale
Good for Phases 1-4
Easy to make
- 1.5 zucchinis
- 5 oz. can of diced tomatoes (No sugar)
- 1 tbsp. olive oil
- salt and pepper
- 1 medium clove of garlic, minced
- 1 tbsp. dried oregano flakes
- 1-2 tsp. garlic powder
- 4-5 medium sized shrimp
- 1.5 c. chopped kale
Step 1. Place a large skillet over medium heat and pour in olive oil.
Step 2. Season with salt and pepper.
Step 3. Add garlic and cook for 1 minute. Cook for 30 seconds, add the tomatoes, oregano.
Step 4. Cook on stove to 15 minutes.
Step 5. Using a mandoline or spiralizer, make your zucchini noodles.
Step 6. Add in the kale and zucchini pasta, until the kale is wilted and the zucchini softens.
Step 7. Heat another skillet with olive oil and add in shrimp, season with garlic powder, salt and pepper.
Step 8. Cook for 1-2 minutes and then flip on the other side for another 1-2 minutes or until shrimp is cooked.
Step 9. Put cooked shrimp on top of Zucchini noodles.
