Chicken – Tandoori Chicken

Tandoori Chicken

Good for Phases 1 – 4
Easy to prepare

Ingredients:

  • 6-8 oz boneless/skinless chicken
  • 2 tsp. tandoori spices
  • 1 c. bell pepper
  • 1 c. vegetable coulis
  • 1 tbsp. ginger
  • 1 tsp. chives
  • ¼ tsp. grape seed oil
  • sea salt & pepper, to taste

DIRECTIONS:
Step 1. Wash chicken.
Step 2. cut up peppers.
Step 3. Prepare coulis –  Roasted Red Pepper Coulis recipe.
Step 4. In a hot non-stick pan, add oil and chicken.
Step 5. Let sear for approximately one minute.
Step 6. Add bell peppers and ginger, vegetable coulis, and chives.
