Great for Phases 1 – 4
Easy to prepare
- 1 medium cucumber
- 1 ½ tsp. kosher salt
- ½ c. Walden Farms mayo (plain or chipotle)
- ¼ tsp. garlic (minced or chopped well)
- 2 ¼ tsp. lemon juice
- 1 – 2 tsp. chopped fresh dill
Step 1. Peel and remove seeds from cucumber.
Step 2. Cut cucumber into large chuncks.
Step 3. Place cucumber chunks in a colander, sprinkle with the kosher salt. Let sit and drain for 30 minutes.
Step 4. Remove excess moisture by blotting with paper towels.
Step 5. Combine all ingredients including cucumbers in food processor, pulse well.
Step 6. Refrigerate for 2 hours
